A bistro built on three rules.
Chef Laurent Beaumont opened Maison Verre in 2021 after fifteen years cooking through Lyon, Paris, and New York. He came home to Birmingham with three rules: buy the best ingredient you can afford, cook it with respect, pour wine that makes the room feel taller.
The kitchen runs on classical French technique. The cellar leans Burgundy, but you'll find Alsace, Loire, Rhône — and a very deliberate handful of things from outside France that earned their spot on the list.
The room itself is small on purpose. Forty-eight seats, a bar, a private dining nook for parties of eight. There are no televisions. The music doesn't get loud.
